Maltose gives only glucose: $\text{Maltose} + \text{H}_2\text{O} \rightarrow 2\text{Glucose}$. Cellulose produces glucose monomers: $(\text{C}_6\text{H}_{10}\text{O}_5)_n + n\text{H}_2\text{O} \rightarrow n\text{Glucose}$. Lactose yields glucose and galactose: $\text{Lactose} + \text{H}_2\text{O} \rightarrow \text{Glucose} + \text{Galactose}$.
