Carrageenan is a polysaccharide obtained from the cell wall of Chondrus crispus (Irish moss). It is used in the stabilization of emulsions in paints and cosmetics and in the alcohol and sugar industry. Hydrocolloid carrageen is obtained from Rhodophyceae.
